Field of view setting

What does this do? I've tried changing it, I see no difference. Is it draw distance or something. Maybe I need to restart the game for changes to take effect? Does it only work with multiple monitors? I have a single monitor 1600x1200. Just curious really.

Field of View is the area on the screen you can see.
